High Protein Keto Bruschetta on Complete Protein Seeded Bread

Ingredients you’ll need:
Spreadable Cheese - We recommend Mascarpone, but any spreadable cheese like cream cheese will work. You can also use yogurt in place of spreadable cheese.
Tomatoes – Roma tomatoes are firm and sweet, ideal for bruschetta. Dicing with a food chopper will quicken this process.
Basil – fresh basil really ties all the flavours together
Garlic – If you love garlic, use 4 cloves for the tomatoes and 1 clove for infusing the oil. Adjust this to your taste but be sure you use fresh garlic.
Balsamic vinegar – adds a rich layer of flavor
Extra virgin olive oil – using the best quality oil will give you the best flavour
Salt and Pepper – Use fresh ground kosher pepper
Ingredients for the Bread Slices
5 slices of Unbun Complete Protein Bread Seeded
1 Tbsp extra virgin olive oil
1 clove of garlic, minced
Ingredients for the Tomato Mixture
- 8 roma tomatoes- diced. Drain off the excess juice once they are diced, this will amp up the flavours of the tomato topping.
- 4 cloves of garlic minced ( use 2 if you prefer less garlic)
- ⅓ Cup fresh basil, chopped
- Mascarpone cheese or a spreadable cheese of your choice
- 1 Tbsp good quality balsamic vinegar
- 2 tsp extra virgin olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions:
Gather the ingredients. Preheat oven to 400 degrees F
Infuse the oil with 1 clove of minced garlic
Brush the oil onto both sides of the Unbun Complete Protein Seeded Bread Slices.
Place the bread onto a baking sheet and toast for 5 minutes, turning halfway through.
Toss together the tomatoes, basil, the remaining garlic
Mix in 2 tsp of olive oil, balsamic vinegar, salt and pepper
Once the bread is lightly toasted, spread on the mascarpone cheese
Spoon on the tomato mixture and enjoy!
Store any excess bruschetta in an airtight container in the fridge for up to 2 days. Note - This bruschetta tastes amazing on grilled chicken too!
