1 pack Unbun Tortillas
2 tbsp avocado oil
1/2 tsp garlic powder
½ tsp chilli powder
20 cooked shrimp, chopped
½ lemons juice
1 limes juice
3/4 cup tomatoes, diced
1 jalapeno pepper, seeds removed & diced
1/3 cup fresh cilantro, chopped
1/4 cup red onion, chopped
1 avocado, diced
Salt and pepper to taste
Preheat the oven to 350F. Line a baking sheet with parchment paper or lightly grease with oil.
In a small bowl combine oil, garlic powder, chilli powder and salt.
Lay tortillas flat on the baking sheet then brush both sides with oil and spice mixture.
Stack tortillas then cut into quarters then spread out on the baking sheet.
Bake for 15-17 minutes then let cool on the baking sheet for another 5 minutes.
While the chips are baking, combine all shrimp ceviche ingredients in a bowl.
Serve together and enjoy!
