Simply put, Becka Crowe makes delicious food. We love just about everything she does, and especially her recipes that include Unbun products. This time is no exception, as she uses one of our Unbaguettes for her take on Banh Mi.
Banh Mi Chicken Meatball Sandwich
1 lb ground chicken
½ cup almond flour
Salt to taste
½ yellow onion
2 cloves garlic
Salt and pepper
½ cup chili sauce
1 tbsp fish sauce
¼ cup coconut aminos or GF soya sauce
1 tsp tapioca starch or cornstarch or arrowroot to thicken
Shredded cabbage + mashed avocado
¼ cup pickled onions
In a bowl combine all the meatball ingredients. Add oil to a pan on the stove top and cook for 10-12 minutes until cooked all the way through, flipping often.
Remove from the pan then add in more oil, onion and garlic. Cook for 2 minutes then add in all other sauce ingredients. Bring to a boil then add in the meatballs. Coat them in the sauce and let simmer for 5 minutes.
Slice an Unbaguette in half then add in the meatballs + all the other topping ingredients.
