Ingredients for Scallion Pesto:
- 6 scallions, thinly sliced
- 1 teaspoon capers
- 1/2 cup fresh parsley
- Grated zest of 1/2 lemon
- 1/4 cup extra-virgin olive oil
- 2 Uncrusts
- ½ cup Sour Cream or plain greek yogurt
- 6 pieces bacon
- ½ small sweet onion, chopped
- ¼ cup fresh parmesan
- Fresh parsley
1. Preheat oven to 400F
2. Combine all pesto ingredients in a food processor or blender until smooth.
3. Spread sour cream on the base of the crust
4. Top with bacon, onion, pesto and parmesan.
5. Bake for 15-17 minutes until the edges of the crust are golden.
5. Top with more parmesan + fresh parsley to serve.
