Ingredients for Scallion Pesto:⁠

  • 6 scallions, thinly sliced⁠
  • 1 teaspoon capers⁠
  • 1/2 cup fresh parsley⁠
  • Grated zest of 1/2 lemon⁠
  • 1/4 cup extra-virgin olive oil⁠⁠

Other Ingredients:⁠

  • 2 Uncrusts⁠
  • ½ cup Sour Cream or plain greek yogurt⁠
  • 6 pieces bacon⁠
  • ½ small sweet onion, chopped⁠
  • ¼ cup fresh parmesan⁠
  • Fresh parsley⁠⁠

Directions: ⁠

1. Preheat oven to 400F⁠
2. Combine all pesto ingredients in a food processor or blender until smooth.⁠
3. Spread sour cream on the base of the crust⁠
4. Top with bacon, onion, pesto and parmesan.⁠
5. Bake for 15-17 minutes until the edges of the crust are golden.⁠
5. Top with more parmesan + fresh parsley to serve.⁠
